Dulce De Leche Pot de Crème

Pot de creme is one of my favorite desserts to make because it is soooo easy, but can be rather impressive. It is also kind of like grown-up pudding and who doesn't love pudding...well I'm sure some people, but never mind that. I also prepared the dulce de leche via sous vide and it was so easy. I know you can also use a crockpot, but I have never tried that method but you can also just purchase some at the store. Good Luck!

Dulce De Leche Pot de Crème

Ingredients

- Equipment: Medium-sized pot
- 1 cup dulce de leche
- 1.5 cups of heavy cream
- 5 egg yolks, at room temperature


- Optional Toppings:
- Dollop of whipping cream or greek yogurt
- Crushed caramel corn
- caramel syrup
- sea salt flakes

Directions


Heat cream and dulce de leche over medium heat until dulce de leche is no longer thick and mixture is warm, but not boiling.

Whisk egg yolks in a medium sized bowl, then add a small amount of the hot dulce de leche and cream and whisk vigorously, then add a little more until you have about half mixed in with the yolks.

Then put the yolk mixture back into the pot and heat on medium/medium low, while stirring.

It will be done when it has thickened and coats the back of a wooden spoon without running.

Pour into ramekins or serving dishes of choice and chill in fridge for at least two hours

Top with a little caramel syrup, a dollop of greek yogurt or whipping cream, crushed caramel corn, and a pinch of sea salt flakes. Enjoy!
