As a working mama, wife, etc. time is not plentiful (as I am sure many of you know). I don't have time to make elaborate dinners, but
it is important to me to make healthy, tasty meals for my crew as much as I can. That being said, I am always desperately in pursuit
of gadgets to make this easier (see - sous vide and instant pot) or recipes that don't require my presence (read - dump and go).
While I enjoy making up time-intensive, special
desserts on the weekend as a creative outlet and sharing those with you guys, I know I am not alone in needing quick meals, so I want to share those more too.
The following recipe is a favorite and requires little more than pouring a bunch of ingredients into a crockpot and then getting on to other things.
Golden Sweet Potato and Barley Stew

Ingredients
Golden Sweet Potato and Barley Stew
- 2 medium-large sweet potatoes, peeled and cubed
- 1 onion, diced
- 3/4 cup dried yellow split-peas
- 1 cup dried green lentils
- 1 cup barley
- 8-10 cups chicken or vegetable stock
- 2 t salt
- 2 t cumin
- 1 T curry
- 1 t turmeric
- 1 t chili powder
- 2 t garlic powder
- Directions
Cook everything in a crockpot on low for 8 hours.
Blend about 3 cups of soup until smooth with 1/3 cup olive oil in a blender.
