Quinoa Breakfast Bowl

In an attempt to cleanse my body after all the medications I was given for birth/c-section, I decided to give the breakfast bowl trend a whirl and thought I would share my creations for this week. Breakfast bowls are great because they kind of force you to rethink uncustomary ingredients like quinoa or wild rice as acceptable morning fare. Lately my "breakfast" has been coffee and then I get distracted until about 2pm with the baby or other projects and end up ravenous, so I am hoping this helps get me back on track.

For my first concoction, I chose - quinoa, squash "noodles", avocado, hard egg, sprouts, pesto, and chia seeds. For dietary info, I like to use a site called Nutrition Data; you can provide personal stats and log your food to track in-depth nutritional info based on your body's needs. For example, using their tracking feature, the nutritional information for this breakfast bowl would show graphs like the following:

Ingredients

- 1/2 cup cooked quinoa
- 1 boiled egg
- 2 T pesto
- 1/2 julienned summer squash
- 1/2 avocado sliced
- 1/2 cup sprouts
- 1 T chia seeds

Directions

I prepare the eggs and quinoa ahead of time, then just heat the julienned summer squash on the stove with some olive oil and salt for a few minutes, then combine all ingredients.



These bowls are so easy to prepare, the hard part is deciding what combinations to throw together, so enjoy!
